Ingredients

Instructions

  1. Prepping: Chop onion, garlic, pepper, tomato, green onion, jalapeno, then set aside. Chop or slice the chicken into bite-size pieces, then sprinkle Hogtown Cajun seasoning over the chicken. Mix the seasoning on to the chicken
  2. Fast-fry: Add neutral oil to a non-stick skillet and sauté onion and garlic over low to medium heat. Sauté for 2 to 3 minutes and set aside in a bowl. Now add neutral oil, let it heat up and add chopped Chicken. You should hear the chicken sizzle as it hits the skillet. Evenly spread against the pan for even cooking. Cook for about 5 to 7 minutes on med to high heat. Ensure it is cooked thoroughly.
  3. Sauce: Add Chicken Stock and Cream or Milk to the same skillet. Whisk in Flour or Cornstarch to thicken. (Note: Add Flour or Cornstarch before the sauce warms up to avoid clumping.) Next, add Cream Cheese and Cajun seasoning. To prevent burning the sauce, continue to whisk and turn down the heat to low. Once you see the sauce thicken, remove it from the heat.
  4. Reminder: Taste the sauce and ensure it is seasoned to your preference.
  5. Pasta: Choose your favourite pasta. Cook it as instructed, add the drained pasta to the sauce and combine on low to medium heat until heated.
  6. Last few steps: Add the Chicken and Vegetables into the sauce. Stir until combined. Add and stir the drained pasta to the sauce to evenly coat all the pasta.

Notes

Plating: Add Cajun Pasta to desired plate or bowl and garnish it with chopped tomatoes, sliced green onions, and jalapeno (optional).


Optional: Serve with mixed green salad and garlic toast.
