Slow Cooker - Roasted Jerk Pork

Ingredients

  • 2 lbs. pork shoulder

  • 1 large carrot

  • 1 large onion

  • 1 celery rib

  • 2 cloves of garlic

  • 2 scotch bonnets (optional)

  • 2 tbsp Hogtown Jerk seasoning

  • 1 cup water or chicken stock

Instructions

  1. Slow cooker time set for 4 hours on high, which is approximately. 300°F (149°C) Note: If you don't have a slow cooker, you can do it in the oven. Ensure the pan is well sealed with foil. Same temperature 300°F (149°C)

  2. Add carrot, onion, celery rib, clove of garlic, and scotch bonnets (optional) to the bottom of the slow cooker. Then sprinkle tablespoons of Hogtown Jerk seasoning, which will infuse your dish with vibrant flavours.

  3. Cut the 2 lbs of pork shoulder into 2 or 3 large pieces. Coat the pork in the Jerk seasoning and add it on top of the vegetable base. Add the water or stock to the slow cooker. Once the lid is on, leave it to cook for 4 hrs on high heat.

  4. At the 4-hour mark, once the pork is fork-tender, taste the Jerk Pork and adjust the seasoning as needed. You can slice the pork and return it to the slow cooker or pan to keep warm until you are ready to eat.

Notes

Serve it hot, accompanied by rice, crusty bread, or your favourite side to soak up the rich, flavourful sauce.
