Cajun Chicken Pasta

Ingredients
Chicken and Vegetable
2 Chicken breasts, boneless, skinless or 4 Chicken thighs, boneless, skinless
1 1/2 tbsp Hogtown Cajun seasoning
1/2 onion chopped
2 garlic cloves, minced
1/2 red bell peppers, sliced
2 tbsp neutral oil (for pan)
Cajun Sauce
4 cups Chicken stock (low sodium)
1 cup 10% cream
6 tbsp all-purpose flour or cornstarch
1 1/2 tbsp Hogtown Cajun seasoning
1/2 block of cream cheese
1 tsp hot paprika (optional)
Garnish
2 small tomatoes, diced
2 green onions, sliced thin
jalapeno, sliced (optional)
Instructions
Prep - Chop onion, garlic, pepper, tomato, green onion, and jalapeno, then set aside. Chop or slice the chicken into bite-sized pieces, then sprinkle Hogtown Cajun seasoning over the chicken. Mix the seasoning onto the chicken
Fast Fry - Add neutral oil to a non-stick skillet and sauté onion and garlic over low to medium heat. Sauté for 2 to 4 minutes and set aside in a bowl. Now add neutral oil, let it heat up and add chopped seasoned Chicken. You should hear the chicken sizzle as it hits the skillet. Evenly spread against the pan for even cooking. Cook for about 5 to 7 minutes on medium to high heat. Ensure it is cooked thoroughly.
Sauce - Add chicken stock and cream to the same pot. Whisk in flour or cornstarch to thicken. (Note: Add flour or cornstarch before the sauce warms up to avoid clumping.) Next, add cream cheese and Cajun seasoning. To prevent burning the sauce, continue to whisk and turn down the heat to low. Once the sauce has thickened, remove it from the heat. Add sea salt and fresh pepper to taste. Note: taste the sauce and ensure it is seasoned to your preference.
Pasta - Choose your favourite pasta. Cook it as instructed, add the drained pasta to the sauce and combine on low to medium heat until heated.
Finish - Add the chicken and vegetables to the sauce. Stir until combined. Add and stir the drained pasta into the sauce to evenly coat all the pasta.
Garnish - Garnish it with chopped tomatoes, sliced green onions, and jalapeno (optional).
